Sweet coconut oat bars



 
I enjoy these with a cup of organic herbal. It makes for a satisfying way to start the morning or as an afternoon snack.


1 cup rolled oats
3/4 cup hemp seeds
1/2  cup dried coconut, shredded and unsweetened
1/2 cup dried mulberries or golden raisins
1/3 cup raw protein powder

1/4 cup  raw cacao nibs
1/2 cup  raw coconut spread or coconut butter (see appendix B)
1/2 cup  raw agave nectar (or maple syrup)
1 teaspoon coconut extract

Place the oats, hemp seeds, dried coconut, mulberries, protein powder, and nibs in a mixing bowl. Briefly stir the ingredients together, and set aside. Next, using a blender (or mini food processor , fitted with the "S" blade), process the coconut butter, agave, coconut extract and nutmeg together until smooth. Add this mixture to the bowl with rolled oats.
Mix thoroughly by hand, or as I prefer, use a mixer with the paddle attachment.
Transfer the mixture onto a baking sheet lined with parchment paper. Mold it into
A square or rectangle (it doesn't have to fit the whole pan). Refrigerate for an hour.
Cut into bars and swap them individually with parchment paper and then with plastic wrap. Store in the refrigerator or freezer
